Vanilla & Raspberry Croissant Rolls

These flaky croissant rolls are enriched with a luscious white chocolate glaze and topped with dried raspberry pieces, making them a delightful treat for breakfast or dessert.

Ingredients

For the Croissant Dough

  • 250g all-purpose flour
  • 5g salt
  • 30g granulated sugar
  • 5g instant yeast
  • 120ml warm milk
  • 120g unsalted butter (for laminating)

For the White Chocolate Glaze

  • 150g white chocolate, melted
  • 50ml heavy cream

For Garnish

  • 30g freeze-dried raspberries, crushed

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine flour, salt, sugar, and yeast.
  2. Add warm milk and knead until a smooth dough forms. Cover and let it rest for 1 hour.

Step 2: Laminate the Dough

  1. Roll out the dough into a rectangle. Place softened butter in the center and fold the dough over it.
  2. Roll out again, fold into thirds, and refrigerate for 30 minutes. Repeat this process 2 more times.

Step 3: Shape the Croissant Rolls

  1. Roll the dough into a thin rectangle and cut into 6 strips.
  2. Roll each strip tightly into a swirl shape.
  3. Place them on a baking tray, cover, and let rise for 1 hour.

Step 4: Bake the Croissants

  1. Preheat the oven to 180°C (350°F).
  2. Bake for 20-25 minutes until golden brown.
  3. Let them cool for at least 20 minutes before decorating.

Step 5: Glaze & Garnish

  1. Melt white chocolate and mix with heavy cream until smooth.
  2. Drizzle over the croissant rolls and sprinkle crushed raspberries on top.
  3. Allow the glaze to set for about 15 minutes before serving.

  • Enjoy with a cup of coffee or tea.
  • Store in an airtight container for up to 2 days.
