Decadent Brownie Cake Recipe

Ingredients (Serves 8-10)

  • For the Brownie Cake:

    • 200g (1 cup) unsalted butter
    • 200g (1 cup) dark chocolate, chopped
    • 250g (1¼ cups) granulated sugar
    • 4 large eggs
    • 1 teaspoon pure vanilla extract
    • 120g (1 cup) all-purpose flour
    • 30g (¼ cup) cocoa powder
    • ½ teaspoon salt
  • For the Ganache Topping:

    • 150g (1 cup) dark chocolate, chopped
    • 120ml (½ cup) heavy cream
  • For Garnish (optional):

    • Powdered sugar
    • Chocolate shavings
    • Fresh berries

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F). Grease a 9-inch round or square cake pan and line it with parchment paper for easy removal.

  2. Melt the chocolate and butter: In a heatproof bowl, melt the butter and chopped chocolate over a double boiler or in the microwave in 30-second intervals. Stir until smooth, then let cool slightly.

  3. Combine wet ingredients: In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until light and creamy. Gradually fold in the melted chocolate mixture.

  4. Add dry ingredients: Sift together the flour, cocoa powder, and salt in a separate bowl. Gradually fold this into the wet mixture until just combined—avoid overmixing.

  5. Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownie cake to cool completely in the pan.

  6. Prepare the ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour it over the chopped chocolate. Let sit for 1-2 minutes, then stir until smooth and glossy.

  7. Assemble: Once the brownie cake is cooled, spread the ganache evenly over the top. Let it set for 15-20 minutes at room temperature.

  8. Garnish and serve: Sprinkle with powdered sugar, chocolate shavings, and fresh berries if desired. Slice into squares or wedges and serve.
