Greek Salad Recipe
Ingredients
For the Salad:
• 2 large cucumbers, diced
• 4 medium tomatoes, diced
• 1 red onion, thinly sliced
• 1 green bell pepper, diced
• 1/2 cup Kalamata olives, pitted
• 1/2 cup crumbled feta cheese
• 1/4 cup fresh parsley, chopped
For the Dressing:
• 1/4 cup extra-virgin olive oil
• 2 tablespoons red wine vinegar
• 1 teaspoon dried oregano
• Salt and freshly ground black pepper, to taste
Instructions
1. Prepare the Salad Ingredients:
o Wash the cucumbers, tomatoes, and green bell pepper.
o Dice the cucumbers, tomatoes, and bell pepper into bite-sized pieces.
o Thinly slice the red onion.
o Combine all the vegetables in a large salad bowl.
o Add the Kalamata olives and crumbled feta cheese on top.
o Sprinkle the chopped fresh parsley over the salad.
2. Make the Dressing:
o In a small bowl or jar, mix together the extra-virgin olive oil, red wine vinegar, and dried oregano.
o Season with salt and freshly ground black pepper to taste.
o Whisk or shake well to emulsify.
3. Assemble the Salad:
o Pour the dressing over the salad ingredients in the bowl.
o Toss gently to coat the vegetables evenly with the dressing.
4. Serve:
o Serve immediately for a fresh and vibrant salad.
o For extra flavor, let the salad rest for 15–20 minutes in the fridge before serving.
