No-Bake Vanilla Cheesecake
This creamy no-bake vanilla cheesecake is rich, smooth, and topped with fresh berries. With a buttery biscuit crust and a luscious vanilla filling, it's the perfect dessert for any occasion!
Ingredients:
For the crust:
200g digestive biscuits (or graham crackers), crushed
100g melted butter
For the cheesecake filling:
500g cream cheese (room temperature)
200ml heavy cream (cold)
150g powdered sugar
2 tsp vanilla extract
1 sachet (7g) gelatin + 3 tbsp water (optional for extra firmness)
For decoration:
Fresh raspberries and blackberries
Whipped cream
Mint leaves
Instructions:
1. Prepare the crust:
Mix the crushed biscuits with melted butter until well combined.
Press the mixture into a springform pan and chill in the fridge for 20 minutes.
2. Make the cheesecake filling:
In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
If using gelatin, dissolve it in warm water and mix it in.
In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
3. Assemble & chill:
Pour the filling over the crust and smooth the top.
Refrigerate for at least 4 hours (or overnight for best results).
4. Decorate & serve:
Pipe whipped cream around the edges and top with fresh berries and mint leaves.
Slice and enjoy!
