Garlic Butter Shrimp & Cheese Toast
Ingredients (Serves 2-3)
6 slices of rustic bread (ciabatta, sourdough, or baguette)
200g shrimp, peeled and deveined
100g grated Gruyère or mozzarella cheese (or a mix of both)
2 tbsp butter
1 tbsp olive oil
2 garlic cloves, minced
½ tsp smoked paprika
½ tsp dried oregano
½ tsp chili flakes (optional)
2 tbsp heavy cream (for creaminess)
1 tbsp fresh parsley, chopped
Salt & black pepper to taste
1 tsp lemon juice
Instructions
1. Toast the Bread:
Preheat your oven to 200°C (390°F).
Lightly brush the bread slices with olive oil and toast them for 5-7 minutes until golden and crisp.
2. Prepare the Shrimp:
In a pan, heat butter and olive oil over medium heat.
Add garlic, paprika, oregano, and chili flakes, stirring for 30 seconds until fragrant.
Toss in the shrimp, season with salt and black pepper, and cook for 2 minutes per side until pink.
Add lemon juice and heavy cream, stirring to coat the shrimp in a creamy, garlicky sauce.
3. Assemble & Bake:
Spoon the shrimp mixture over the toasted bread.
Sprinkle generously with grated cheese.
Bake at 200°C (390°F) for 5 minutes until the cheese is bubbly and golden.
4. Garnish & Serve:
Sprinkle with fresh parsley and serve warm.
Chef's Tip:
For extra depth, rub the toasted bread with a cut garlic clove before adding the shrimp. Serve with a light arugula salad and a drizzle of balsamic glaze for an elegant touch.
