Mozzarella Cheese-Wrapped Chicken & Bacon Rolls
Indulge in these crispy, cheesy rolls made with melted mozzarella, juicy chicken, and crispy bacon. A low-carb, high-protein snack or appetizer that’s perfect for any occasion!
Ingredients (Serves 2-3)
6 mozzarella cheese slices
1 ½ cups cooked chicken, shredded or grilled
¼ cup cooked bacon, crumbled (about 2-3 slices)
1 tbsp low-carb ranch dressing
1 tsp green onion, finely sliced
Instructions
Step 1: Prepare the Filling
1. In a bowl, mix shredded chicken, crumbled bacon, ranch dressing, and green onions.
2. Stir until well combined.
Step 2: Melt the Mozzarella
1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
2. Place the mozzarella slices on the tray, ensuring they don’t overlap.
3. Bake for 4-5 minutes until the cheese melts and the edges become slightly golden.
Step 3: Assemble & Roll
1. Remove the melted mozzarella slices from the oven and let them cool for 30 seconds (they should still be soft but not too hot).
2. Spoon the chicken and bacon mixture onto each slice.
3. Carefully roll them up while the cheese is still flexible.
Step 4: Serve & Enjoy!
Let them set for a minute before serving.
Serve with extra ranch dressing or your favorite dipping sauce.
Tip: For extra crispiness, pan-sear the rolls for 1-2 minutes after rolling.
