Savory Green Bean & Potato Skillet with Crispy Bacon
This hearty and flavorful dish is perfect for family gatherings or casual dinners. The combination of tender potatoes, crisp green beans, and smoky bacon makes it an irresistible favorite!
Ingredients:
500g (1 lb) baby potatoes, diced
300g (10 oz) fresh green beans, trimmed
200g (7 oz) bacon, chopped
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
½ tsp black pepper
½ tsp salt (adjust to taste)
½ tsp dried thyme
½ tsp red pepper flakes (optional, for a spicy kick)
2 tbsp fresh parsley, chopped (for garnish)
Instructions:
1. Cook the bacon:
In a large skillet over medium heat, cook the chopped bacon until crispy.
Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the pan.
2. Sauté the potatoes:
Add olive oil to the skillet (if needed) and toss in the diced potatoes.
Cook for about 10-12 minutes, stirring occasionally, until golden brown and fork-tender.
3. Add the green beans & aromatics:
Stir in the green beans and chopped onion.
Cook for another 5 minutes until the beans are slightly tender.
Add garlic, smoked paprika, thyme, salt, and black pepper. Mix well and cook for another 2 minutes.
4. Combine & serve:
Return the crispy bacon to the skillet and toss everything together.
Cook for another minute, letting the flavors meld.
Sprinkle with fresh parsley and serve warm.
