Garlic Herb Roasted Chicken & Potatoes
Juicy, tender roasted chicken with crispy potatoes in a flavorful garlic herb butter sauce. A comforting and easy one-pan meal!
Ingredients (Serves 4-6)
For the Chicken & Potatoes
4 chicken breasts (or thighs)
1 ½ lbs (700g) baby potatoes, quartered
3 tbsp olive oil
4 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
½ tsp black pepper
½ tsp salt
For the Garlic Butter Sauce
3 tbsp butter, melted
1 tbsp honey
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
Instructions
Step 1: Prepare the Chicken & Potatoes
1. Preheat oven to 400°F (200°C).
2. In a bowl, mix olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
3. Coat the chicken and potatoes evenly in the mixture.
Step 2: Roast
1. Place chicken breasts in a greased baking dish. Arrange potatoes around them.
2. Bake for 30 minutes, uncovered.
Step 3: Add Garlic Butter Glaze
1. Mix melted butter, honey, and lemon juice.
2. Brush over the chicken and potatoes.
3. Bake for another 10-15 minutes until chicken is golden and cooked through.
Step 4: Serve & Enjoy!
Garnish with fresh parsley and serve warm.
Tip: Broil for 2-3 minutes at the end for an extra crispy top.
