Charred Corn & Avocado Tacos with Chipotle Lime Crema

Ingredients:

8 small corn tortillas(tacos bread ) 


2 ripe avocados, diced


1 cup corn kernels (fresh or grilled)


1/2 red onion, finely chopped


1/4 cup cilantro, chopped


1 tbsp olive oil


1 tsp chili powder


1 tsp smoked paprika


Salt and pepper to taste


For the Chipotle Lime Crema:


1/2 cup sour cream


1 tbsp lime juice


1 chipotle pepper in adobo sauce, minced


1/2 tsp garlic powder


Salt to taste


Instructions:


1. Grill the Corn : In a skillet over medium-high heat, drizzle the olive oil and add the corn kernels. Sprinkle with chili powder and smoked paprika, letting them char beautifully, about 5 minutes. The corn should take on a smoky, slightly caramelized sweetness that brings the heat of the spices to life.


2. Prepare the Crema: In a bowl, whisk together sour cream, lime juice, chipotle pepper, garlic powder, and salt. Taste it—a balance of smoky heat, tang, and creaminess that’ll make your mouth water.
