Ingredients:
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 can (400g) whole peeled tomatoes (or 4-5 fresh tomatoes, peeled and chopped)
1 tbsp tomato paste (optional, for richer flavor)
1 tsp sugar (balances acidity)
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp dried oregano or basil (or both)
1 bay leaf (optional, for extra aroma)
¼ tsp red pepper flakes (optional, for a bit of heat)
Instructions:
1. Sauté the aromatics: Heat the olive oil in a pan over medium heat. Add the onion and sauté for about 5 minutes until soft. Add the garlic and cook for 30 seconds until fragrant.
2. Cook the tomatoes: Add the tomatoes (crush them with a spoon if using canned), tomato paste, sugar, salt, pepper, and herbs. Stir well.
3. Simmer: Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally. If it gets too thick, add a little water.
4. Blend (optional): For a smoother texture, blend the sauce with an immersion blender or regular blender.
5. Taste and adjust: Remove the bay leaf if used. Adjust seasoning if needed.
6. Serve or store: Use immediately or let it cool and store in the fridge for up to 5 days or freeze for later use.
Tips:
For extra depth, add a splash of balsamic vinegar or a pinch of smoked paprika.
If using fresh tomatoes, blanch and peel them first for a smoother sauce.
