Decadent Chocolate Truffles

Ingredients:

  • 200g dark chocolate (70% cocoa), finely chopped
  • 100ml heavy cream
  • 25g unsalted butter, room temperature
  • 1 tsp pure vanilla extract (or liqueur of choice)
  • Cocoa powder, melted chocolate, or chopped nuts for coating

Instructions:

  1. Prepare the Ganache

    • Place the chopped chocolate in a heatproof bowl.
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil).
    • Pour the hot cream over the chocolate and let it sit for 2 minutes to soften.
    • Gently stir with a spatula until smooth and fully combined.
  2. Add Flavor and Chill

    • Stir in the butter and vanilla extract until the mixture is silky.
    • Cover and refrigerate for at least 2 hours, or until firm enough to scoop.
  3. Shape the Truffles

    • Using a teaspoon or small scoop, portion the ganache and roll into small balls with your hands.
    • Place them on a parchment-lined tray and chill for 15 minutes.
  4. Coat the Truffles

    • Roll the truffles in cocoa powder, dip them in melted chocolate, or coat them with chopped nuts.
    • Let them set at room temperature for 10 minutes before serving.

Storage:

Store in an airtight container in the fridge for up to 1 week or freeze for longer shelf life.
