Ingredients:

  • 500g cream cheese (at room temperature)
  • 200g granulated sugar
  • 4 large eggs (at room temperature)
  • 250ml heavy cream
  • 1 tsp pure vanilla extract
  • 30g all-purpose flour (sifted)
  • A pinch of salt
  • Optional: Fresh red berries and cape gooseberries for garnish

Instructions:

  1. Prepare the oven and pan:

    • Preheat your oven to 210°C (410°F).
    • Line a 9-inch springform pan with parchment paper, ensuring it extends at least 2 inches above the rim to prevent spills and achieve the signature rustic look.
  2. Mix the batter:

    • In a large mixing bowl, beat the cream cheese and sugar together with a hand or stand mixer on medium speed until smooth and creamy (about 2–3 minutes).
    • Add the eggs one at a time, mixing thoroughly after each addition.
    • Reduce the speed to low and pour in the heavy cream and vanilla extract. Mix until fully incorporated.
    • Sift the flour and salt into the mixture and gently fold with a spatula until smooth. Avoid overmixing to maintain a light texture.
  3. Bake the cheesecake:

    • Pour the batter into the prepared pan and gently tap it on the counter to release any air bubbles.
    • Bake for 50–55 minutes or until the top is deeply golden brown with slight cracks. The center should wobble slightly when shaken, which ensures a creamy texture.
  4. Cool and set:

    • Remove the cheesecake from the oven and let it cool to room temperature for 1 hour.
    • Once cooled, transfer the cheesecake to the refrigerator to chill for at least 4 hours, or ideally overnight, to allow it to fully set.
  5. Serve and garnish:

    • Carefully remove the cheesecake from the springform pan and peel away the parchment paper.
    • Garnish with fresh red berries and cape gooseberries for a touch of elegance.
    • Slice with a sharp, clean knife and serve chilled.
